HOW TO MAKE NIGERIAN BUNS



Ingredients for Nigerian Buns.

450g All-purpose flour.
100g Granulated sugar. 
225g Cold milk and water mixture. (75g milk &75g water)
50g Melted butter or vegetable oil.
7g Baking powder.
1g Salt. 
2g grated nutmeg.
1 large egg
1.5-liter oil for deep-frying
2 Tbs Evaporated milk (optional)
1 Tbs Honey (optional)

Note

  • Depending on the kind of flour you have, you might need more liquid or less. This measurement is perfect with bread flour and multipurpose flour.
  • Regardless of the flour you have, a great way of getting the right consistency for buns dough is by first doing 50% hydration. i.e., If you have 1000g of flour, 50% hydration will be 500g of liquid (milk and water mixture.) 
  • After adding all the wet ingredients, mix properly. Then decide to add more liquid if needed.
  • Buns need a deep-fry. This means you need enough oil.
  • It is advisable to use a deep frying pan or pot.

Instructions on How to Make Nigerian Buns.
  • In a bowl, mix all the dry ingredients; flour, baking powder, salt, sugar, and nutmeg. 
  • In the mixture, add milk, eggs, melted butter: evaporated milk, and honey (optional). Mix thoroughly; the batter should be a smooth, not runny, and not stiff dough. Allow the mixture to rest for 15mins.
  • In a deep pan, add vegetable oil. Ensure to have enough frying fat, at least 5 centimeters high.
  • Ensure that the oil is not super hot or warm. A midpoint is excellent. 
  • Scoop the batter in small sizes; they increase in size when they come in contact with heat. Also, do not overcrowd the pan. 
  • Fry for between 10-15 minutes. Yes, it needs time to cook correctly; else, the inner part will remain raw.
  • Turn from time to time until golden brown.
  • Take the buns out of the oil place on napkins to soak up excess oil.
